Makes 4 servings.
- 4 slices “Dave’s” killer bread
- 1 avocado, smashed
- 4 poached eggs
- 12 Roma tomatoes, sliced
- ¼ cup arugula
- salt and pepper to taste
First, cook the eggs as desired. Toast bread and spread ¼ of the avocado on the bread. Layer on the tomatoes and sprinkle with salt and pepper. Garnish with arugula and poached egg.
