Pumpkin Spice Ice Cream
makes 12 servings
4 cups lite coconut milk
1 cup pumpkin puree
1 teaspoon pumpkin pie spice
½ cup honey or agave nectar
½ teaspoon vanilla extract
Add all instructions to a blender and blend until combined. Put mixture in shallow bin and freeze until
solid. Remove from freezer 10-15 minutes before service and shave with ice cream scoop.
