This healthy key lime pie recipe is a delicious, guilt-free way to satisfy your sweet tooth. With a greek yogurt base and graham cracker crust, it is always a winner!
Mini Key Lime Pie Cups – 8 portions
- 1 1/4 C. Plain Greek Fat Free Yogurt
- 1/2 C. Evaporated Milk
- 2 Tbs. Key Lime Concentrate
- 1 tsp. Xanthan Gum
- 3 Crushed Graham Crackers
In a large mixing bowl, mix all ingredients besides graham crackers together until fully incorporated. In a food processor, pulse the graham crackers until finely chopped. Place 1 Tbs. graham cracker crust in the bottom of ramekin and fill with 2 oz. of yogurt mix. Let chill at least 2 hours before serving.
