Makes 12 servings
Cake:
1/2 C. Coconut Flour
4 Large Eggs
1/4 C. Honey
1/3 C. Melted Coconut Oil
2 Tbs. Light Coconut Milk
1 tsp. Vanilla Extract
1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Apple Cider Vinegar
1/4 tsp. Salt
Berry Topping:
1/2 C. Blueberries
1/2 C. Blackberries
1/2 C. Strawberries
2 Tbs. Honey
Combine all ingredients in a large bowl and mix thoroughly. Line a small baking tray with parchment and spray with non-stick cooking spray. Add cake batter and bake for 15-20 mins until golden brown and cooked through.
Toss the berries with the honey. Cover and let rest for an hour until the berries have released their juices.
