What are Microgreens?

Microgreens

Slightly more mature than sprouts, and not quite the adult plant itself, “microgreens” are actually just the miniature versions of the living foods you’ve (hopefully) already been enjoying your whole life. Microgreens are the babies, toddlers, and tweenagers of the already massively nutrient-dense families of plants like: sprouted grains, herbs, edible flowers, lettuces, various veggies, and gorgeous, leafy greens, reds, and purples.

Aside from being robustly flavorful, vibrantly colorful, and refreshingly delicious, microgreens and babygreens naturally pack an intensely concentrated amount of the same vitamins, minerals, and nutrients that their adult counterparts also carry. From Kale, Beet Greens, and Rainbow Chard, to Arugula, Dark-Leaf Lettuces, Pea-Greens, and Spicy Radish, microgreens of all kinds provide anywhere from 40 to 70 times the potency and density of specific vitamins, nutrients, and minerals, compared to the full-grown, adult versions! One bite of these micro-baby-greens is nutritionally equal to literally dozens of bites of the adult plants!

Rather than having to wait weeks and even months to harvest certain foods, microgreens are harvested after as little as 7 to 10 days! And because of that, you can start growing your own little trays right on your kitchen counter or windowsill! Just some of the vitamins, minerals, and phytonutrients most abundant in these colorful, little power-packs are: B6, C, E, K, K1, Beta-Carotene, Copper, Magnesium, Lutein, natural probiotic enzymes, essential amino acids, etc, etc. And when you thought those were plenty enough, a lot of these super-greens are even packed with up to 40% protein!
