Southwest Quinoa Bowl

Movara’s Southwest Quinoa Bowl is a favorite dish here at the resort… packed with flavor, this tasty bowl satisfies even the pickiest of eaters. Quinoa is a great base for bowls or salads because it is nutritious and soaks up the flavors of dressings and seasonings. Quinoa is gluten-free, rich in fiber and a great source of protein. ENJOY!

Southwest Quinoa Bowl

makes 8 servings

8 cups cooked quinoa

2 cups cooked black beans

2 cups cooked corn

1 cup diced yellow onion

1 cup diced bell peppers

1 cup tomatoes

½ cup cilantro

½ cup tortilla strips

8 ounces diced avocado

1 tablespoon lime juice

1/8 teaspoon salt 

1/8 teaspoon pepper

 

Cook quinoa in vegetable stock until done and prep vegetables. Heat a large pan to high

heat and sauté onion, peppers, and corn until soft. Next add in black beans and quinoa. Once heated

through, remove from stove and add cilantro, lime juice, tomatoes, and salt and pepper. Divide into 8 equal

portions and garnish with tortilla strips and 1 ounce of avocado.
