Oatmeal Cranberry Cookies – Servings: 18, Serving size: 2 cookies
1 ¼ cups whole wheat pastry flour
1 ½ cups instant oats
2 teaspoon baking powder
1 teaspoon baking soda
2 eggs
1 ¼ cups almond milk
1 tablespoon vanilla extract
¼ cup chopped pecans
1 teaspoon salt
1 cup cranberries
1 teaspoon cinnamon
½ cup dehydrated cane sugar
Preheat oven to 350 degrees. Mix dry ingredients and wet ingredients separately, and then mix together. Spray a sheet pan with Pam ® non-stick cooking spray. Spoon out 36 scoops of cookie dough (approx. 2 Tablespoons in size) Bake for about 10 minutes or until done. Let cool on a cooling rack
