Fruit & Oat Energy Bars  – Serves: 24,  Serving size: 1 bar

2 cups Gluten-Free Oats

2 cups Dried Fruit, assorted

1 cup Walnuts

1 cup Flax Seeds

1 cup Wheat Germ

½ cup Chia Seeds

½ cup Gluten Flour

2 scoops protein powder, Sunwarrior® Classic Vanilla

1 tsp Cinnamon

2 tsp Vanilla

¾ cup Pure Maple Syrup

4 Eggs

¼ cup Dark Chocolate Chips, melted

In a food processor, add everything except chocolate, syrup, and eggs. Puree everything until you get a sand-like mixture (should take around 2 minutes.) In another small bowl, whisk the eggs together. Then add the dry mixture to a mixing bowl and hand mix the eggs and maple syrup until it is fully incorporated. Move the mixture to a sheet pan that is sprayed with a nonstick cooking spray and bake for 20 minutes on 325° degrees. While the energy bar is baking melt the chocolate chips. Cool the energy bars and then drizzle the chocolate over the top. Cool completely before cutting the bars into 4 pieces x 6 pieces in the pan.
