Avocado Toast w/ Poached Egg & Arugula – Serves 4
4 Slices Ezekiel bread, toasted
1 Avocado split 4 ways
4 Poached whole eggs
3 Slices of tomatoes per piece of toast
1/4 C. Arugula
Pinch of salt and pepper to taste
Start slicing tomatoes and cooking eggs. After bread is toasted, spread 1/4 avocado on each toast, layer on the tomatoes then the arugula. Place egg on top of toast and sprinkle with salt and pepper.
