Quick and Healthy Chicken Caprese Salad

Chicken Caprese - Serves 10

A fresh, vibrant dish that combines tender grilled chicken with a bright Caprese salad, pesto, and balsamic drizzle.

Ingredients:

Chicken

  • 10 (6-ounce) chicken breasts, grilled and cooked

Caprese Salad

  • 3 ½ cups heirloom grape tomatoes, halved

  • 10 ounces mozzarella cheese, small balls (halved)

  • ¼ cup fresh basil, chopped

  • ¼ cup lemon juice

  • ½ teaspoon sea salt

  • ½ teaspoon black pepper

Garnish

  • ¼ cup balsamic reduction

  • 1 cup pesto

Side Salad

  • 10 cups arugula

  • ½ cup lemon vinaigrette

Instructions

  1. Prepare the Salad

    • Chop tomatoes and mozzarella balls in half.

    • Toss with basil, lemon juice, sea salt, and black pepper. Set aside.

  2. Cook the Chicken

    • Preheat grill and oven to 350°F.

    • Grill chicken breasts on each side until marked, then transfer to the oven.

    • Bake for about 18 minutes, or until cooked through.

  3. Assemble the Plate

    • Place ½ cup of the tomato salad mixture on each plate.

    • Set a grilled chicken breast on top of the salad.

    • Toss arugula with lemon vinaigrette and serve 1 cup per person on the side.

    • Drizzle chicken with pesto and balsamic reduction.
