Sunrise Avocado Toast

Makes 4 servings.

  • 4 slices “Dave's” killer bread
  • 1 avocado, smashed
  • 4 poached eggs
  • 12 Roma tomatoes, sliced
  • ¼ cup arugula
  • salt and pepper to taste

First, cook the eggs as desired. Toast bread and spread ¼ of the avocado on the bread. Layer on the tomatoes and sprinkle with salt and pepper. Garnish with arugula and poached egg.

Per serving: 300 calories, 16g fat, 180mg sodium, 22g carbohydrates.
