Mini Key Lime Pies

This healthy key lime pie recipe is a delicious, guilt-free way to satisfy your sweet tooth. With a greek yogurt base and graham cracker crust, it is always a winner!

Mini Key Lime Pie Cups - 8 portions

  • 1 1/4 C. Plain Greek Fat Free Yogurt
  • 1/2 C. Evaporated Milk
  • 2 Tbs. Key Lime Concentrate
  • 1 tsp. Xanthan Gum
  • 3 Crushed Graham Crackers

In a large mixing bowl, mix all ingredients besides graham crackers together until fully incorporated.  In a food processor, pulse the graham crackers until finely chopped.  Place 1 Tbs. graham cracker crust in the bottom of ramekin and fill with 2 oz. of yogurt mix. Let chill at least 2 hours before serving.Per Serving: 50 calories, 1.5g fat, 4g carbohydrates, 4g protein, 3g sugar
