Turkey, Spinach & Artichoke Wrap

Turkey, Spinach & Artichoke Wrap – Serves 6

6 Whole wheat tortillas

24 oz. Roasted turkey (chopped)

12 oz. Oven roasted tomatoes, (drained well from oil)

6 oz. Fresh spinach

12 oz. Artichoke hearts, packed in water (chopped)

3 oz. Mozzarella (shredded)

1/4 C. Pesto sauce

Note: Heat tortillas on flat grill. On each tortilla spread pesto and sprinkle 1/2 oz. of cheese. Over the cheese place 4 oz. turkey, 1 oz. spinach, 2 oz. artichoke hearts and 2 oz. tomatoes. Wrap up and bake for 10 minutes at 350 degrees to melt cheese.
