Sweet Potato Pie

We love discovering new and delicious ways to incorporate vegetables into our meals and we are excited to share this item with you from the Movara kitchen! Chef Sam and his team have come up with this yummy, EASY recipe for sweet potato pie. Even if you are not a fan of sweet potatoes, this is a must try! Not to mention, the maple-glazed almonds are to die for.

 

Pie Filling – serves 5

2 c diced sweet potatoes

2 tsp butter

1 tsp vanilla extract

2 tsp cinnnamon

 

Pie Crust

1 grahm cracker

2 tsp melted butter

 

Begin by boiling or steaming the potatoes for 20 minutes or until soft. Once the potatoes are done stain from water and allow to rest for 5 minutes. Combine the potatoes with butter, cinnamon, and vanilla in a food processor and blend until smooth. Crush graham cracker and combine with melted butter, mix evenly. Place 2 tsp. graham cracker mix in five 2 ½ oz ramekins. Evenly divide sweet potato filling on top of graham cracker mix.

 

Maple Glazed Walnuts

1 oz. chopped walnuts

1 Tlbs maple syrup

½ tsp Truvia

 

Preheat oven to 350 degrees. Combine all ingredients together and place on a sprayed cooking sheet. Place in oven at 350 degrees for 10-15 minutes. (Stir occasionally) Divide evenly between the desserts.
