Super Sauces

Ever get sick of the same old marinara sauce night after night on your whole grain pasta selection? I definitely can start to lose interest in my pasta if I see it looking and tasting exactly the same all the time. Thanks to the Eat Smart writers at Women’s Health magazine for providing some new delicious super food sauces to help a sister out with expanding her taste buds! Try out one of these sauce spins (with minor adjustments by me for less calories)to spruce up your dinner and please share if you have any other crowd-pleasers…

Cauliflower Garlic Chunky Fiber Sauce
Directions: Boil 1 head of cauliflower then add to saucepan with 2 chopped cloves of garlic,2 tbsp. balsamic vinegar and 2 tbsp. olive oil. Mash contents of pan together until at a consistency you like and add more flavor with some chopped parsley and pepper flakes.

Garbanzo Bean Power Protein Sauce
Directions: Add one can of cooked garbanzo beans in water to a pan with 1 finely chopped onion heated. Add fresh tomato chunks, oregano, basil and rosemary to taste.

Tangy Artichoke Sauce
Directions: Puree a large can of artichoke chunks in water, then add to a heated saucepan of minced garlic. Can add some fresh squeezed lemon or lime for extra flavor without the calorie load.

Almond Basil Creamy Sauce
Directions: Grind together in a food processor 1/4 c almonds and 1/2 c chopped basil. After pureed, add to the processor 1 c diced tomatoes and 1 tbsp minced garlic and continue to grind until consistency of choice.
