Super Bowl Appetizers from Chef Sam’s Kitchen

Are you ready for Super Bowl?! The Patriots and Sea Hawks are going head to head, but are you ready to go head-to-head with temptation? Chips… Dip.. Soda.. They will be calling your name! But not to worry, we have some great recipes that will make resisting temptation easy! Check out these Super Bowl appetizer recipes from Chef Sam’s kitchen that are healthy AND DELICIOUS!

Mixed Skewer

 

Marinade for meat     serves 6

1 t. Lemon Juice

1 t. Grapeseed oil

¼ t. salt & pepper

1 t. Worcestershire sauce

¼ t. granulated garlic

¼ t. granulated onion

¼ t. pepper flakes

¼ t. parsley flakes

4oz. chicken breast

4oz Top round sirloin

½ Zucchini

½ yellow Squash

½ Red Bell pepper

6 grape tomatoes

 

Cut the Steak and chicken into 6 equal pieces. Marinade the meat at least 1 hour. Skewer 1 of each meat and vegetable. Preheat grill ,cook for1-2 minutes a side. Place in oven at 350 degrees for 7-10 minutes. Season skewers with a sprinkle of salt and pepper.

Deviled Eggs

5 Large Eggs

2 T. Mayo

1 T. Greek Yogurt

1 t. Mustard

Pinch of salt and pepper to taste

 

Boil Eggs until hard. Cut in half and remove yolk. Combine yolks with mayo, yogurt, mustard and salt and pepper. Use a sandwich bag to pipe mixture into egg halves. Dust top with paprika.

 

Serving size 2 half eggs.

Sweet & Spicy Grilled Wings

Marinade

8 Skinless Wings

1 ½ T. Honey

1 T. Grapeseed Oil     

½ t. Salt & Pepper

½ t. Granulated Garlic

½ t. granulated onion

 

Hot Sauce

6 oz. Franks Buffalo sauce

¼ C. Honey

1T. unsalted Butter

¼ C. Water

2 T. Cornstarch + 2 T. Water

 

To make hot sauce combine the first 4 ingredients in a medium sauce pan. Bring to a simmer. Combine water and cornstarch together and add to sauce. Return to a simmer and serve marinade chicken wings for one hour. Grill until thoroughly cooked. Toss in hot sauce and serve.
