St. Patrick’s Day Dinner

Happy St. Patrick’s Day!

 

Chef Sam and I always ahve a great time deciding on what the theme of the monthly newsletter should be, and this one was an easy one! in case you missed the newsletter, Chef Sam would like to share this awesome recipe for Bangers & Mash and Shamrock Salad. If you notice, he even made the cucumbers into a shamrock, how fun! This is not only yummy, but not difficult to prepare! I would definitely suggest giving it a try and let us know how it goes!

 

Here is the recipe!

 

Bangers & Mash

Mash

3 c. Yukon Potatoes

½ c. Milk

2 t. Butter

Salt and pepper to taste

1 small yellow onion slices

Calories 269 g Protein 15g Fat 13g Carbs 23g Fiber 1.5g

 

Boil the potatoes for 20 minutes on high heat. Strain from water and mash with milk, butter, salt and

pepper. Caramelize onions. Grill sausages until brown and hot.

 

Shamrock Salad

½ Romaine

½ Spinach

½ Spring Mix

4 Cucumber Slices

4 Snow Peas

½ T Pumpkin Seeds

Pesto Vinaigrette (Pesto sauce with ½ White Balsamic Vinegar)

 

Calories 82g Protein 3g Carbs 6g Fat 6g Fiber 1g

 

Combine all ingredients in a small mixing bowl.
