I had a working lunch recently and decided to make a very simple and easy Build Your Own Greek Salad. I set out:
Mixed greens
Chopped cucumber
Grape tomatoes, halved
Sliced olives
Feta cheese
Pumpkin seeds (optional, or use any desired nut or seed)
Lentils (just opened a can of these – you could also use chicken or other protein, but lentils were super easy! A rotisserie chicken would be just as simple?)
Dressing – pictured is Corey?s recipe, our lifestyle cooking demo facilitator here at the Resort! You could use any vinaigrette mixture like this one or buy/make your own greek dressing.
Also had these tortilla chips and fruit (a mixture of blueberries, raspberries and purple grapes – use any you love)!
It was super tasty, fed a crowd and took me maybe 15 minutes to collect ingredients, open a couple of cans and chop tomatoes, cucumber and fruit. Quick, easy and cool summer meal!
