PEPPERMINT CHOCOLATE ICE CREAM – Serves 8
1 candy cane chopped into pieces
2 cups coconut cream
1 T. unsweetened cocoa powder
1 T. honey or sweetener of choice
1/8 t. vanilla extract
1/8 t. peppermint extract
Note: Add all ingredients to blender until combined. Transfer to cake or bread pan and freeze for 1-2 hours. Shave with ice cream scoop into ¼ Cup portions and sprinkle with broken candy cane.
