Serving size 1 cup
4 cups water
3 tablespoons better than bullion chicken-less base®
3 4-ounce chicken breasts, grilled and diced
2 cups canned white hominy
¼ cup onion, diced
2 tablespoons garlic, chopped
1 cup Anaheim peppers, roasted and diced
3 tablespoons cornstarch + 3 tablespoons water

½ yellow onion, chopped
1 lime, cut into 6 wedges
½ bunch Radish, thinly sliced
1 ripe Tomato, chopped
1 cup cabbage, shredded
1 tablespoons Mexican oregano
1 cup Cheddar soy cheese, shreds
1/2 cup pico de gallo
Grill chicken on medium on medium heat, cook on each side 6-8 minutes or until done. In a stock pot add the water and chicken-less base mix together and bring up to a simmer. Once it is at a simmer make a cornstarch “slurry” by adding the 3 tablespoons of cornstarch to 3 tablespoons of water and mix together. Then slowly stir it into the simmering pot of water. Add in the hominy, Anaheim peppers, garlic and onion.
