Celery Cilantro Soup ? Serves 6 (servings size 6 oz)
Ingredients
1 T butter, unsalted
3 cups vegetable broth
2 cups celery
3 cloves garlic
½ cup yellow onion
1 can coconut milk
1 cup cilantro, chopped
½ cup parsley, chopped
3 T cornstarch + 3 T water = slurry
Directions
Sauté onions, celery and garlic in butter until soft. Add in the vegetable broth and let simmer for about 15-20 minutes. When vegetables are fully cooked, remove from heat and add to a blender- Then blend cilantro and parsley into the soup. Add in coconut milk and reheat the soup. Bring to a simmer and thicken with a corn starch slurry. Season with salt and pepper if needed.
