Movara Featured Recipe: Peach Raspberry Cobbler

Peach Raspberry Cobbler
Serves: 6

In honor of August being “National Peach Month”, Movara is happy to share our healthy and yummy ‘Peach Raspberry Cobbler’ recipe! You can make this cobbler with, or without, the added fruit. Hope you enjoy it! 

Ingredients:

½ C. Fresh Peaches, diced
½ C. Fresh Raspberries
1 T. Maple Syrup
½ T. Cinnamon
1 ½ T. Cane Sugar
1 tsp butter

Topping:

¼ C. Instant gluten free oats + ½ C. Instant gluten free oats
¼ C. Pecans
1 T. Butter
1 t. Cinnamon
3 T. Dehydrated Cane Sugar

The topping is for 12 people, if you try to blend anything small you will find its hard to blend together. You can freeze the rest of the topping and use it for later?

Directions: 

Sauté fruit, maple, cinnamon, butter, and cane sugar in a sauté pan over medium heat. Cook until fruit has softened, and the liquid has become thick. While sautéing fruit, preheat oven to 325 degrees and prepare topping. In a food processor, add ¼ c. instant oats, pecans, butter, cinnamon, and cane sugar. Blend until all lumps are gone and everything is evenly chopped. Add mixture to a mixing bowl, and mix in the remaining ½ c. of instant oats. When fruit is done, portion ¼ cup fruit mixture into 6 – 3 ounce porcelain or cast iron individual serving dishes. Place the 6 servings on a sheet pan. Sprinkle topping mixture over each serving evenly and bake for 13-15 minutes. Cool for 10 minutes and serve.
