Gluten-Free Sausage Stuffing 
Serves 6 (Serving Size: ½ cup)
- ¾ tsp extra virgin olive oil
- ¼ cup Spanish onion, diced
- ½ cup celery, diced
- 3 ¾ oz chicken sausage, crumbled
- ¼ tsp fresh thyme
- ¼ cup Italian parsley, chopped
- ¼ tsp fresh sage, chopped
- 1/8 tsp salt, to taste
- 1/8 tsp black pepper, ground
- ½ cup gluten free bread, diced
- 2 fl oz chicken broth, low sodium, organic
Brown sausage in oil. Soften vegetables in the same pan. Add seasonings. Add bread and broth. Mix well to absorb the broth.
