Open-Face Salmon Tostada
Top one La Tortilla Factory 100 calorie whole wheat tortilla with prewashed arugula, 1/4 cup cold black beans, 3-4 ounces canned salmon in water mixed with balsamic vinegar and tomatillo salsa.
Quick Quesadilla Meal
Melt 1/4 c skim mozzarella between two corn tortillas and top with preprepared chicken like Trader Joe’s ‘Just Chicken’, chopped tomato, onions, minced garlic and mushrooms.
Cold Shrimp Skewers
Layer 3-4 ounces cold shrimp cocktail with sliced cucumber, tomatoes, and sugar snap peas. Then serve on top of 1/2 cup of microwaveable brown rice and drizzle with Bragg’s Liquid Aminos.
Hummus Deli Wrap
Stuff one 100-120 calorie whole wheat pita pocket with 2 tablespoons hummus, 3 ounces of sliced turkey meat, prewashed butter lettuce, sliced bell peppers and some persian cucumbers.
