This St. Patrick’s Day, don’t forget to not only wear green, but eat plenty of greens! A great way to make sure you are getting plenty of greens is to throw them in a smoothie! Spinach is packed with energy boosting protein and mint also has a lot of great vitamins that aid in digestion. Overall, this recipe is packed with nutrient dense, yummy goodness, we just had to share! Enjoy!
Mint Chip Smoothie – serves 1
1 cup non-dairy milk (add extra water if needed to desired consistency)
1 cup spinach
1 frozen banana (or fresh and use 1 cup ice)
3 tbsp shelled hemp seeds
2 tbsp fresh mint leaves
½ tsp vanilla
1 tbsp dark chocolate chips
Combine all ingredients in blender in order listed. Blend until smooth. If desired, you can add chocolate chips after blending.
