I love reading the comments from our resort guests each week and without fail people ALWAYS mention the kitchen staff and how friendly they are, and they ALWAYS mention how delicious the food is.
I walked back into the kitchen today and this is what I saw! Music was on, everyone was smiling, and the kitchen staff were around this table preparing our delicious lunch! No wonder everyone loves the kitchen staff and they all love their job!

I asked Chef if I could share the recipe with you guys today and he said yes! So here it is. Make sure you tell us how they come out when you try it!
Bean & Rice Burrito
Servings: 6
Serving size: 1 burrito per person
1 cup brown rice, cooked
1 cup kidney beans, canned
1 cup turkey, ground 99% fat free, cooked
¼ cup roasted peppers, diced
¼ cup green onions, diced
½ cup lime vinaigrette
1/8 cup cilantro, chopped
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon sea salt
½ teaspoon black pepper
6 whole wheat tortillas
Steam rice until it is cooked then heat the beans and rice together. While the rice is steaming cook the ground turkey until it is fully cooked. When the beans, rice and turkey are all fully cooked add them into a mixing bowl. Mix in the vegetables, vinaigrette and the seasonings, then mix together. Add ½ cup of the mixture to each burrito. Burrito is best when served with the roasted pepper sauce and the avocado sauce.
