Italian Swiss Steak
Serves 5
16 oz. top round sirloin
1 cup diced yellow onion
2 tsp Worcestershire sauce
2 tsp grapeseed oil
1 tsp minced garlic
½ cup sherry cooking wine
1 cup tomato sauce
2 ½ cups diced tomatoes
2 cups chicken stock
1 ½ cup rice
4 cups water
2 ½ oz. Mozzarella
1 tbls lemon juice
Combine the water and rice and cook as directed. In a medium sauce pan, heat oil over medium heat. Add in onions and garlic and sauté for 3-5 minutes. Next, add sherry cooking wine and simmer for another 30 seconds. Add in tomato sauce, diced tomatoes and chicken stock and bring to a low simmer. Slice steak into ¼ inch strips and add to sauce pan. Cover and let simmer on low for two hours (stirring occasionally). When done, add lemon juice and salt/pepper if needed. Serve 4 oz. of steak with 4 oz. of sauce over ½ cup of rice.
Serve with your favorite vegetables on the side and enjoy!
