Healthy Appetizers

Stuffed Jalapenos  – makes 10                                                       

5 whole jalapenos

6 tbsp cream cheese                                                                  

1 piece cooked turkey bacon                                                               

1 ½ tbsp diced chives                                                                  

½ tsp minced rosemary                                                             

1 tsp minced basil

½ tsp beaten egg

2 tbsp bread crumbs  

                                                                                

Begin by halving the jalapenos and removing the stems and seeds. Place jalapenos in steamer or microwave for 2-3 minutes. Combine all ingredients together except the bread crumbs. Remove Jalapenos from steamer or microwave and allow to cool. Place the stuffing mix into a sandwich bag and pipe about 3 teaspoons into each jalapeno half. Dust the top with the bread crumbs. Bake in oven at 350 degrees for 10 minutes or until the tops are golden.

Stuffed Mushrooms – makes 10

10 mushroom caps

¼ c cream cheese

2 tbsp Greek yogurt

1 tsp minced thyme

1 tsp minced rosemary

2 tbsp Greek yogurt       

                                                             

Place mushroom caps in steamer or microwave for 2-3 minutes. Combine all ingredients together. Remove mushrooms from steamer or microwave and allow to cool. Place the stuffing mix into a sandwich bag and pipe about 2 teaspoons into each mushroom cap. Bake in oven at 350 degrees for 10 minutes or until the tops are golden.

Olive Tapenade – makes 15

½ c green olives

¼ c Kalamata olives

¼ c roasted tomatoes

¼ c artichoke hearts

1 oz. Feta cheese

1 tsp lemon juice

1 tsp grapeseed oil

Salt & Pepper to taste

15 baguette slices

 

Fine chop all ingredients aside from the baguette, and combine together. Toast baguette slices in oven at 325 degrees for 6-8 minutes or until lightly toasted. Place 1 tablespoon of mixture on each baguette slice and serve.
