Grilled Marinated Steak Kabobs with Roasted Vegetables

Grilled Marinated Grass Fed Steak Kabobs with Stuffed Tomatoes and Roasted Vegetables 

Serves 6
30 oz grass fed filet or sirloin steak – serving size 5 oz.

1 ½ tsp extra virgin olive oil
¾ cup zucchini, sliced 1” thick
¾ cup yellow squash, sliced 1 “ thick
¾ cup red bell pepper, sliced 1” thick
Salt and pepper to taste

 

Dressing:
6 fl oz Golden Tomato Vinaigrette Dressing

1 Tbsp extra virgin olive oil

1 ½ cups golden tomatoes, roasted

1 clove garlic

1 Tbsp fresh basil

¼ tsp oregano

1 ½ Tbsp honey

1 ½ fl oz red wine vinegar

¼ tsp sea salt, to taste

¼ tsp black pepper, coarse ground

Cube steak into 1×1” pieces. Skewer 5 oz of beef on a metal skewer. Rub the grill with small amount of oil. Grill skewers until medium rare. Toss vegetables in 1 Tbsp oil and spread out on sheet tray. Cook for 10 minutes at 350 degrees until softened. Lay skewered meat alongside vegetables and garnish with dressing.
