Gazpacho

Gazpacho

Serves 6- 8oz

½ yellow bell pepper

½ red bell pepper

½ green bell pepper

½  cucumber

½ zucchini

½ yellow squash

3 roma tomatoes

½ jalapeno pepper

½ cup minced cilantro

3 cup V-8 juice

1 T. lemon juice

¼ t. paprika

½ t garlic powder

½ t. salt & pepper

 

Finely dice all vegetables and combine with remaining ingredients. Place in fridge to chill at least 1 hour.
