French Lentil Soup Serves 4
4 C. Vegetable Broth
1 T. Butter
¼ C. Yellow Onions, diced
¼ T. Garlic, minced
¼ C. Carrot, diced
¼ C. Celery, diced
½ C. Stewed Tomatoes
1 C. Lentils, cooked
1 T. Parsley
1 t. Paprika
½ t. Cumin
Note: In a soup pot, sauté the onions in the butter until they are glossy. Stir in garlic, paprika, celery, carrots, and sauté for 10 minutes. Once the vegetables have sautéed for 10 minutes stir in tomatoes, chicken stock, lentils, and cumin. Stir well and bring the mixture to a boil. Slowly reduce the heat and simmer for 20 minutes on low to medium heat; or until the lentils are tender. Sprinkle the soup with parsley beforeserving.
