If you are an Eggs Benedict fan, you will love this healthy breakfast Recipe! Perfect for Sunday Brunch! Chef Sam put this together for us, and believe me when I say it is amazing. I am a huge fan of Eggs Benedict, but I did know it is always packed with fat and carbs. This recipe however, has that amazing restaurant taste but is so much better for you!

Eggs Benedict Caprese
Serves 2
1 English muffin
2 Poached eggs
4 Slices tomatoes
2 Slices Pancetta
½ oz Fresh Mozzarella
1 oz Hollandaise sauce
½ oz Pesto
Hollandaise Sauce serves 12 ½ oz
2 egg yolks
2 t. butter
½ C. milk
1 t. rice wine vinegar
Pinch cayenne pepper
Salt & Pepper to taste
Using a double boiler melt butter and slowly whisk in egg yolks. Then add milk, vinegar and
Cayenne pepper. Bring to a low simmer to thicken. This should only take 1 -2 minutes. Season
With salt and pepper.

Toast English muffins, and place 1 slice of Pancetta on each half. Top pancetta with a poached egg
followed by 2 slices of tomatoes and 1 slice of fresh mozzarella. Ladle ½ oz of the Hollandaise over the
