Creamy Cauliflower Soup ? Serves 6

Ingredients

¼ C. Celery, diced
¼ C. Yellow Onion, diced
¼ C. Carrot, diced
1 t. Garlic, minced
1 t. Grapeseed Oil
3 C. Chicken Broth
3 ½ C. Cauliflower, bite sized pieces
1 C. Lite Coconut Milk
¼ C. Sharp Cheddar Cheese, shredded
Sea Salt and Black Pepper to taste

Directions

Note: Add oil, garlic, onion, celery and carrot to pot and sauté. Add broth and cauliflower and bring to simmer. Add coconut milk and thicken soup as needed with cornstarch. Add cheddar cheese just before serving. Serving size 6 fl. oz.
