3 cups vegetable stock
½ cup couscous, cooked
½ sweet potatoes, small diced
¼ cup green onion, chopped
1/8 cup pecans, chopped
½ cup carrot, shredded
½ cup yams, small diced
1 teaspoons onion powder
1 teaspoons garlic powder
¾ teaspoon sea salt
½ teaspoon black pepper
2 tablespoon corn starch + 2 tablespoon water, mix to make slurry
Bring vegetable stock, potatoes and yams to a boil. Stir in seasonings. Thicken the soup with corn starch slurry. Add in the carrots, green onions, couscous, and pecans. Simmer for 3 more minutes. Serve hot.
