Chocolate Pie

Calling all chocolate lovers! I love it when Chef Sam makes this for our guests! It is just the right amount of chocolate goodness. Not too rich, and just the right amount! you may notice however, that in the recipe it says to put the ingredients in a pan. At the resort we prepare them in the smaller sized dishes to get the perfect single serving, and of course to make sure our guests are staying within the number of calories they are consuming per day. It does give you a really good idea, however, of what size a good serving can be!

 

If you guys are like me, and you like to plan meals for the week on Sunday evening, that is the perfect time to make these! They need to stay in the fridge for a while, so if you’re looking for a desert for the week or if you have guests coming over, these are easy to make in advance!

 

Chocolate Pie – Serves 16

Serving size: about a 2″ x 2″ square

2 cups grape nuts®

2 ½ cups Greek style yogurt

2 packages Mori Nu® chocolate pudding mix

3 tablespoons water

 

Using a 9″x9″ casserole pan, sprinkle grape nuts on the bottom of the pan so it completely covers the bottom of the dish. In a blender add the yogurt, Mori Nu® pudding packages and water. Mix until the yogurt is smooth and has a pudding consistency. Slowly add the pudding mixture over the grape nuts so as to not move the grape nuts. Very gently smooth out the top of the pie with a pie spatula. Cover pie with plastic wrap and refrigerate for 2 days. (The pudding will absorb into the grape nuts and make them more of a crust the longer the pie sets up.
