Chocolate Drizzle Banana Muffins
Serves 15
2 ½ cup oat flour
½ tsp baking powder
1 ½ tsp baking soda
¼ tsp salt
1 cup really ripe bananas
¼ cup oil
1 tsp vanilla extract
½ cup chocolate chips
Combine all dry ingredients (except chocolate chips) in a bowl, in a blender combine all wet ingredients and bananas and blend until smooth.
Add wet ingredients to dry and mix. Using a ¼ c scoop portion into a greased muffin pan, and bake in oven at 325 degrees for 12-14 minutes. Melt the chocolate chips in a double boiler and drizzle over the muffins.
