Chocolate Chip Banana Bread Muffins
2 1/2 cups oat flour (can make it yourself by grinding oats in a high-powered blender)
1/2 tsp baking powder
1 1/2 tsp baking soda
1/4 tsp salt
1 tbsp milled flax seed
1 cup mini dark chocolate chips
5 ripe bananas
¼ cup oil (recommend coconut oil for the best taste ? will need to melt it to a liquid first)
1 tsp vanilla
2 eggs
Preheat oven to 350 degrees F. Prepare a loaf pan by spraying lightly with cooking spray. In a large mixing bowl, combine flour, baking powder, baking soda, salt, flax seed and chocolate chips and stir to mix. In a blender, combine banana, oil, vanilla and eggs and blend until smooth. Pour banana mixture into flour mixture and stir just until combined. Pour batter into lined muffin tins and cook 18-20 minutes.
