Chilled Apple Soup

Serves 4
Serving size 1 cup
2 cups apple juice
1 cup pineapple juice
1 ½ cups frozen granny smith apples, thawed
¼ teaspoon cinnamon
1 sprig of fresh mint
1 vanilla bean
¼ cup honey
With a knife, split the vanilla bean in half, long ways. With the back of the knife carefully scrape out the vanilla bean. Make sure to scrape out all the vanilla. In blender add all other ingredients, and blend until smooth. Then serve in a chilled soup bowl, about 8 ounces per serving.
