Banana Oatmeal Cake

Serving size: about a 2” x 2” square
2 cup whole wheat pastry flour
2 cup instant oats
1 teaspoon sea salt
1 tablespoon baking powder
1 teaspoon baking soda
½ cup cane sugar
½ tablespoon banana extract
7 over bananas, ripe
¾ cup dried cranberries
¼ cup eggs
½ tablespoon cinnamon
2/3 cup rice milk
2/3 cup water
1 tablespoon vanilla extract
Preheat oven to 350 degrees. Mix dry ingredients and wet ingredients separately, and then mix together. Spray a 8”x8” pan with Pam ® non-stick cooking spray. Bake for about 30 minutes or until cooked. Cut into 16 pieces and let cool.
