2 granny smith apples
2 Fiji apples
½ teaspoon cinnamon
1teaspoon pure vanilla extract
½ cup light coconut milk
Grate 4 apples until you reach the core of the apple. In a mixing bowl add all the ingredients except the topping mixture. Mix together and let marinate for at least 5 minutes.
Topping:
¼ cup instant oats + ½ cup instant oats
¼ cup pecans
1 tablespoon unsalted butter
1 teaspoon cinnamon
3 tablespoon cane sugar
In a food processor, add ¼ c. instant oats, pecans, butter, cinnamon, and cane sugar. Blend until all lumps are gone and everything is evenly chopped. Add mixture to a mixing bowl, and mix in the remaining ½ c. of instant oats. Split the mixture 4 ways and add the topping on the 4 servings.
