Tart Apple Crisp à la Mode

There are a lot of unhealthy traditional foods and flavors that pop up when the leaves start to fall. But this month’s recipe lets you enjoy a decadent autumn treat that you don’t have to feel guilty about!  It not only includes the directions for one of the healthiest and most delicious baked pastries you’ll ever eat, but also how to create the scrumptious ice cream that goes with it.

Makes 3 servings.

1 gala apple, diced small 

1⁄2 teaspoon light brown sugar 

1 tablespoon honey 

1⁄2 teaspoon vanilla extract 

1⁄2 teaspoon cinnamon 

Combine all ingredients together and let stand for 30 minutes. Transfer to a single-serve cast iron pan or small baking dish.

Crust: 

3 tablespoons graham crackers

1 tablespoon oats 

Combine all ingredients in a food processor and pulse until powdery. 

Divide crust evenly across the three pies and bake for 20-25 minutes at 350 degrees until apples are soft. Serve with Ice Cream.

 

Ice cream: 

Makes 8 servings (serving size 1 ounce) 

1 cup thai kitchen coconut milk 

1⁄4 teaspoon vanilla extract 

1⁄4 teaspoon almond extract 

1 tablespoon honey 

1⁄2 teaspoon truvia 

 Mix all ingredients in a blender and place in a shallow dish. Freeze for at least 2 hours and shave with an ice cream scoop. 

 

Per serving: 123 calories, 21g carbohydrates, 1g protein, 26mg sodium, 2g fiber, 1g fat
